What do you recommend for cutting soffit? Is there a special blade for a circular saw? I am concerned about cutting a straight line.

Why cut it at all? I'd just remove it before covering it with a vented soffit. On the other hand, if you insist on cutting it, try a skill saw with a smooth cut blade. As far as cutting a straight line goes, you can use trim that will cover over the mis-cut and have it go over the hole a bit more. Only you will know that its there.
